Chef Fong shows off traditional Balinese dishes gleaned from his travels of many years past to the fabled village of Peliatan: whole duck steamed in a banana leaf with spices and candlenuts, chicken lawar salad with toasted coconut, and pork satay grilled on sticks of lemongrass. An $8 wine option is payable at class.
