Discover the secret to pan searing halibut to a perfect golden crust while keeping the inside tender and flaky. Then build a vibrant mint pea purée from scratch--balancing sweetness, freshness, and citrus--and roast a colorful mix of spring vegetables to complete the meal. Pick up pro tips on seasoning, temperature control, and plating for an elegant, restaurant-quality finish. Chef Courtney Bourasaw of The Skagit Table celebrates the best of spring cooking: light, bright, and full of flavor. Hands-on.

Notes:
