Enjoy a delicious lasagna featuring earthy, wild mushrooms and greens as well as a variety of Italian cheeses including pecorino Romano. Served with a balsamic side salad and a lemon rosemary focaccia. While most traditionalists will teach you to mix ingredients between each layer, Richard will teach you to separate each layer into groups of sauces--Besciamella and Bolognese. The result is harmony in separation--both visually and in taste. Richard Balogh is the owner and chef of Rifugio's Country Italian Cuisine, an Italian staple found on Mount Baker Highway.
