Elevate your next dinner party using classic techniques! Chef Kai Despain will teach you to highlight produce and seafood at its peak using an open-ended approach. He will guide you in preparing local clams with chorizo and pickled peppers, as well as an entrée of trout and seasonal vegetables with a butter sauce. Currently Chef for Banter's dinner program, Kai Despain challenges the idea of what a modern restaurant can be, using traditional techniques to make accessible food influenced by many different cultures.
