Caribbean Summer

Trinidad native Sarah Chan adapts Caribbean favorites for the Northwest. Enjoy an appetizer of baiganee (fried batter-dipped eggplant slices) with mango chutney; garlic butter cassava; Caribbean chicken curry; and callaloo--the spicy vegetable stew of taro leaves, coconut milk, pumpkin, bell peppers, okra, celery and more--often considered the national dish of Trinidad and Tobago. A $7 wine option is payable at class.
