Alaskan Halibut

Chef Fong presents halibut three ways: oven-baked with toasted walnuts, basil, and chives; dipped in whipped egg whites, dark ale, and cayenne pepper, then pan-fried in a cast iron skillet; and poached in a fast, easy shallot and olive oil marinara sauce.
